Being able to make a bread pudding has totally helped me become more confident in the kitchen. I think it is the feeling that I can whip together a delicious tasting dessert, with the most basic of ingredients, especially those that might be left over during the holiday season. Panettone is a type of Italian Christmas bread that is available in Lidl stores across Cyprus. If you haven’t tried this bread, don’t dismiss it as I always did for years and years. Even if you don’t enjoy the taste on its own, it makes for a spicy and flavourful bread pudding. As it is Christmas Eve, I am going to wish you all a very merry Christmas and Happy New Year and write again next year. What a year it has been, and how happy I am to finally be able to draw a line underneath it! Love to all.





6 & 1/2 cups diced Favorina Panettone Classico slices, (about 1 inch cubes)
1/8 cup raisins
brandy for soaking
pinch of salt
pinch all spice
1/4 cup white sugar
2 eggs
3 tablespoons butter
1 & 3/4 cups milk
1/4 cup whipping cream
1 teaspoon vanilla extract
zest of 1 orange
brandy for soaking


Preheat the oven to 350F. Butter a casserole dish. Gently melt the butter and dip the pieces of bread in the same and add them to the dish. In another small bowl, stir together all the other ingredients. Pour all over the cubed bread in a casserole dish. Bake for 42 minutes. Dust with icing sugar and serve.
